Moda Cabernet Sauvignon Merlot 2022

The Moda's story began in 1984.

I was in London, out to taste the great wines of the world.

It was in a darkly lit wine bar that a barman in suit and tie approached my table. He had overheard I was an Australian winemaker and insisted I try his favourite red.

The wine arrived in a bowl-shaped crystal glass. Its hue was deep purple, almost black. The aroma — raisin, leather, tobacco, antique wood — was unforgettable.

The barman revealed it was an Italian Amarone, made from air-dried grapes. In that moment, I resolved to master this technique.

For three years, I experimented. Finally, I found the formula: 80% Cabernet, 20% Merlot, grapes dried for two weeks. The barrels in my cellar now had the same rich aroma I had experienced in that London wine bar.

I had found my signature style - my Moda.
